  • 1 head of cauliflower, chopped into small pieces

  • 1/2 cup of sour cream
  • 1/2 cup of almond flour
  • 1/4 cup of butter, melted
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder

Instructions:

  1. Preheat your oven to 375°F.
  2. Boil the chopped cauliflower in a pot of salted water for about 5-6 minutes, or until tender. Drain the water and set the cauliflower aside.
  3. In a large bowl, mix together the heavy cream, cheddar cheese, parmesan cheese, sour cream, almond flour, melted butter, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  4. Add the cauliflower to the bowl and mix until everything is well combined.
  5. Transfer the mixture to a baking dish and spread it out evenly.
  6. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and the cheese is melted and bubbly.
  7. Let the mac and cheese cool for a few minutes before serving.
